With the appointment of award-winning Chef YoungDae Shim as their new Executive Sous Chef, ANJU, located in Sindhorn Midtown Hotel Bangkok, Vignette Collection, is aiming to redefine modern Korean dining in the heart of Thailand's bustling capital.

Chef Shim's impressive resume boasts a world tour of flavors. From honing his craft in South Korea to gracing Michelin-starred kitchens in the UK, his experience spans continents and cultures. This global perspective, coupled with a deep respect for Korean culinary traditions, are set to ignite a new fire at ANJU.

New from Old

Chef Shim's new menu, harmonizes classic Korean ingredients with contemporary techniques. The result? A menu that tantalizes taste buds and leaves a lasting impression.

ANJU's new menu is a testament to Chef Shim's creativity. Take the Pickled Salmon & Prawn, a dish where soy sauce-marinated seafood meets a crisp seaweed cracker, creating a textural and flavorful explosion. Or delve into the Busan Style Fishcake and Beef Tendon Soup, a comforting and rich broth teeming with assorted fish cakes and melt-in-your-mouth beef tendon.

The Beef Bulgogi Slider, meanwhile, is akin to a handheld taste of Korea. This innovative creation features succulent soy-marinated beef nestled within a fluffy brioche bun. But the true star of the show is the cucumber kimchi, adding a touch of sweet and spicy intrigue to every bite.

For those seeking a luxurious experience, the Egg Lava with Caviar Trio is a must-try. This savory egg soufflé bursts with a trio of exquisite fish roes, offering a decadent bite. Spice enthusiasts can opt for the Black Chili Poppers, where juicy pork is encased in a light and crispy charcoal batter, before being amped up with the heat of chili peppers.

ANJU caters to health-conscious diners as well. The Cold Kimchi Noodle Soup utilizes gluten-free corn noodles bathed in a cool kimchi broth, offering a delightful and healthy alternative to heavier dishes. This is the perfect choice for a guilt-free lunch or a palate cleanser between courses.

ANJU's new mains caters to all palates. Meat lovers will rejoice at the Bone-in Short Rib. This slow-cooked Australian black angus masterpiece is lightly smoked in vine wood, infusing it with an irresistible aroma and smoky depth. Seafood enthusiasts won't be disappointed either. The Miso Snow Fish features charcoal-grilled snow fish, perfectly complemented by a flavorful bean paste marinade. Each bite is a harmonious blend of textures and tastes.

No Korean dining experience is complete without a delightful dessert. ANJU's Jooak & Makgeolli Ice Cream presents a playful twist on tradition. Glazed glutinous rice doughnuts are paired with Korean rice wine ice cream, offering a sweet and refreshing conclusion to the meal.

For those seeking a fruity finale, the Fruit Bibimbap Bingsoo is a vibrant masterpiece. Seasonal fruits mingle with orange panna cotta, creating a visually stunning and palate-pleasing dessert.

Chef Shim's culinary creations seamlessly complement ANJU's existing beverage program. With Korean-inspired cocktails and mocktails like the Beon-De-Gi, Kim-Bap, Ggul-Tteok, Baesuk, and Kimchi variations, every element of the dining experience is a celebration of Korean flavors.
