Inside Novotel, Aimée Petit Bistro is plating up escargots, brie truffles, and seafood vol-au-vent with serious skill.

Small, cozy, and full of charm, Aimée Petit Bistro channels the spirit of a true French neighborhood spot in Rangsit. Tucked away on the first floor of Novotel Bangkok Future Park Rangsit, the dining room feels like a quiet corner of Montmartre (where you will find the famed Basilica and much of the Paris’ artistic atmosphere), with soft lighting, low ceilings, and just enough seats to keep things personal. At the helm is Chef Aurélien Houguet, a French native with nearly two decades of experience, including seven years cooking professionally in Paris. His style is rooted in tradition and simplicity, with a focus on high-quality seasonal ingredients and meticulous technique.

The one-page menu keeps things tight but thoughtful. You’ll find niçoise salad with gently cooked eggs, seafood vol-au-vent in rich puff pastry, and steak tartare served with precision. The brie truffles are an indulgent nod to French cheese lovers, and the escargots are as classic as they come, made with garlic, parsley, and butter. Even the sea trout is flown in fresh from France. Everything is presented with care and understated elegance, without ever feeling fussy.
