Taking the sustainability gimmick and turning it up to 11. 

Wasteland was opened for a short time but left a big mark from its pandemic run starting in 2020, closing in 2021. Now, they’re back and with a whole new vibe. 
 
Behind the bar and—well, everything else—you have award-winning bartender Kitibordee ‘Gov’ Chortubtim and hospitality pro Dharath ‘Tot’ Hoonchamlong who are working to make a cool cocktail spot for the Thonglor crowd doing something very, very different.
 
 
In their new multi-storey location, the space is split between the Bar on the second floor, Lab on the third, the Office on the fourth, and the Rooftop on the fifth. The second and third floor is where you’ll do most of your drinking, and they plan to host “curated experiences” here. 
 
This is a bar that takes sustainability seriously, and that’s evident from their rooftop where they have composting, a small green space, and a garden for ingredients—a focus spearheaded by Tot who is a former sustainability director. 
 
 
Sustainability isn’t just in the venue’s DNA, it’s in the glass. The entire opening cocktail menu is a World Wild Waste menu divided into three sections. The World section takes spins on classic cocktail favorites like the Checkered Russian mixing the white and black Ruskies into one drink and the Wrong Island, which takes notes of a Long Island Ice Tea with Cacao Cola. 
 
The Wild section of the menu goes natural with ingredient-focused drinks that go really, really far—with the Ant-idote, which literally features ant eggs, sure to be a crowd favorite. And, this is also where you’ll find their vegan-friendly Blurred Cheese with Noni fruit. 
 
 
Waste is all about bi-products, so going from nose-to-tail. The Fossil Fuel features crab shells and fish bones and the Morning After Espresso uses coffee chaff. 
 
If all this is feeling like a little too much, ask about their tasting serving to sample a little bit of everything. Expect a paired-to-the-bone vibe with cocktails that could become known as some of the most creative in the city.
