To fight off the fierce heat this April, Central Chidlom’s FoodLoft has launched Thai seasonal staple khao chae starting from April 1 to the end of this month . Staying true to its origins as a simple, homey recipe during the reign of King Rama II, the khao chae served here is made from steamed rice soaked in aromatic jasmine water while other generous-portioned side dishes—crunchy shrimp paste balls, deep-fried shallots stuffed with dried fish, sweet peppers filled with ground chicken and shrimp coating in egg—are served along with plentiful plates of greens and fruits, like finger roots, raw mango, spring onions and cucumbers.

Despite its cultural richness and status as a delicacy, the way to enjoy this khao chae is pretty straightforward. You start by filling a quarter of your bowl with rice, covering your rice in jasmine water & a bit of crushed ice, savouring a tiny bit of each of the side dishes, fresh fruits and vegetables before slurping down some of the iced water to keep things cool. The results are refreshing and moreish, begging for a second serving during the hot months. For those who want to taste the dish in a more traditional way, try pairing the shrimp balls with mango strips and finger roots with stuffed sweet peppers.

Those with a sweet tooth can also enjoy special drinks and treats from Foodloft’s high tea set, which features a bowl of Thai sticky rice topped with ripe mango alongside various quick bites and a selection of teas.
